Recipes For Your Slow Cooker



Country Split Pea Soup

500 grams of green split peas
8 cups water
500 grams of bacon bones
10 whole black peppercorns
100 grams (1/2 cup) chopped celery leaves
2 bay leaf
1 medium chopped onion

Presoak the split peas as per instructions on the packet. Then put all the ingredients into your slow cooker. Cover and cook on low for 8 to 10 hours.

Serve with toast or fresh damper.




Oxtail and Vegetable Soup

1 kg oxtail pieces
1 can of tomatoes
2 carrots sliced
2 medium sized chopped onions
3 - 4 celery stalks sliced
2 medium sized diced potatoes
5 cups water
1 teaspoon salt
4 - 8 whole black peppercorns.

Simply place all the ingredients into your slow cooker. Cover with the lid and cook on low for 12 hours. Can be kept on the heat for upto 24 hours if needed.

Serve as an entree or main course.




Chilli Con Carne

500 grams dried red kidney beans
500 grams blade steak sliced into thin strips
2 tablespoons flour
1 - 2 teaspoons of powdered chilli
1 - 2 teaspoons cumin powder
2 teaspoons salt
1 large chopped onion
1 can of tomatoes
2 - 4 cloves garlic
2 cups water

Note: If using American chilli powder, then you wont need the cumin powder.

Place the steak strips and the flour into a freezer bag and shake to coat the beef with the flour.

Then place all the ingredients into your slow cooker and stir. Cover with the lid and cook on high for 1 hour. Reduce the heat to low and cook for a further 8 to 10 hours.


Roast Tarragon Chicken

Yes, you can use your slow cooker for roasting...

1 whole chicken 1.5 - 2 kg
Salt and pepper
Butter
Tarragon

Make sure that the skin of the chicken is very dry. To dry the skin use a clean tea towel or paper towel.

I have never tried this with a stuffing, so I am not sure if it would work. What I do is simply sprinkle salt and pepper into the cavety. About 1 teaspoon is each.

Dab the surface of the chicken with butter and then smooth it over. Enough butter to thinly coat. Then sprinkle the tarragon all over the chicken.

Put the chicken into your slow cooker and cook on high for 1 hour. Then drop the heat to low and cook for a further 8 hours.

You can add vegetables if you want. However, adding veg will introduce water to the cooker and might stop the chicken from browning.
